One morning Gary and I stopped for breakfast on our way home from visiting friends in Wisconsin.
Served along with our breakfast was a generous slice of the best warm cinnamon coffee cake topped with a dollop of whipped butter.
When I got home my mission was to find a recipe that tasted just like it. This week's recipe is pretty close.
Cinnamon Breakfast Ring
1 cup butter or margarine, softened
2 3/4 cups sugar, divided
2 teaspoons vanilla
3 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
16 ounces sour cream
3 tablespoons ground cinnamon
1/2 cup chopped walnuts
In a mixing bowl, cream butter and 2 cups sugar. Add eggs, one at a time, beating well after each addition. Add vanilla; mix well. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream. Spoon a third of the batter into a greased and floured 10-inch tube pan. Combine the cinnamon, nuts and remaining sugar; sprinkle a third over batter. Repeat layers twice. Bake at 350 degrees for 65-70 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from the pan to a wire rack. Best if served warm.
1/2 cup lite mayonnaise
8 flour tortillas
4 lettuce leaves
2 medium tomatoes, sliced
8 slices deli turkey
8 slices deli ham
8 slices Provolone cheese
8 slices bacon, cooked
Spread mayonnaise on each tortilla. On flour tortillas, layer lettuce, tomatoes, turkey, ham, cheese and bacon; top with remaining tortillas. Cut into quarters. Serve with salsa.
Yummy Fruit Salad
2 cups cantaloupe, cubed
2 large red apples, chopped
1 cup green or red grapes, sliced
1 medium banana, sliced
1/2 cup lemon yogurt, lowfat
1 tablespoon orange juice concentrate
In a serving bowl, combine the fruit. Combine the yogurt and orange juice concentrate. Drizzle over fruit.
GARY'S TIP: When preparing hamburgers for the grill, add a package of dry onion soup mix to about 2 pounds of burger. It really brings out the flavor.
