Fresh local fruit is increasingly available in many regions.
The California Tree Fruit Agreement offers advice about how to make sure peaches, plums and nectarines you buy are perfectly ripe to eat.
Never put firm fruit into the refrigerator, they say. It won't ripen any more and may become dry or mealy.
If fruit is too firm to eat, ripen it by putting it in a paper bag at room temperature for one or two days. Look for free paper ripening bags that are to be given away at grocery stores.
