Remember true meaning of Memorial Day

Memorial Day is observed annually on the last Monday in May, in honor of the nation's armed services personnel killed in wartime.

The day traditionally is marked by parades, picnics, speeches and ceremonies, and the decoration of graves with flowers and flags. It is a day to remember the soldiers who have died fighting for their country and a time to remember the veterans still living, who also fought in the wars.

As we gather with family and friends over Memorial Day weekend, let's take a moment for a Memorial Day salute to the men and women who have served and protected our country.

Hidden Valley Layered

Mexican Dip

Serving size: 10

1 package Hidden Valley Dip Mix, ranch

1 pint low-fat sour cream

16 ounces fat-free refried beans

1 cup low-fat cheddar cheese, shredded

2 1/2 ounces black olives, drained and sliced

Tomatoes, diced

Green onion, chopped

Mix original ranch dip mix with sour cream. Spread refried beans in a serving dish. Spread dip mixture on top of beans and top with cheese and olives. Garnish with tomatoes and green onions. Serve with baked tortilla chips or veggies or pita. One serving is 120 calories, 3 Weight Watchers points.

Lime Dill Chicken Breasts

Serving size: 4

4 chicken breasts, deboned and skinned

Marinade:

1/4 cup lime juice

1/4 teaspoon salt

1/8 teaspoon pepper

1/2 teaspoon dried dill weed

1/2 teaspoon dried minced onion

2 tablespoons melted butter

Combine all marinade ingredients in a heavy zip lock plastic bag; mix. Add chicken breasts; seal bag. Turn to coat chicken with marinade; let stand at room temperature for 10-15 minutes. Meanwhile, pre-heat charcoal grill. Place chicken breasts over medium coals or low setting on gas grill. Cover grill, grill for five minutes on each side. Chicken also may be oven-broiled. Baste with butter after turning.

Mixed Greens with

Raspberry Vinegar Toss

Serving size: 6

1 1/2 heads Romaine lettuce, torn

1/2 cup raspberry vinegar

1/3 cup shallot, chopped

3/4 cup olive oil

Salt and pepper

Blend vinegar and shallots in blender. Gradually add oil. Season with salt and pepper. Pour over lettuce right before serving.

* May also add pieces of crisp, fried bacon and fresh mushrooms to salad.

GARY'S TIP: To remove damp mud spots from carpets, sprinkle cornstarch on spot, let stand 15 minutes and then vacuum.
