Recipe a fresh taste for potatoes

Potatoes are such a "Fun Food." You can do so many things with potatoes.

I have a weakness for potatoes and am always trying new potato recipes. This week, I would like to share a wonderful creamy potato recipe I recently tried that has cream cheese, thyme and tarragon that really gives this recipe a fresh taste.

My daughter-in-law Pam just loved them and asked me to e-mail her the recipe.

If you enjoy potatoes as much as I do, you will want to try this recipe.

Creamy Cream

Cheese Potatoes

2 1/2 pounds red potatoes, unpeeled and cut into 1 inch slices

1 teaspoon salt

8 ounces cream cheese, cubed

1 cup buttermilk

1 bunch green onions, sliced

1 teaspoon dried thyme

1 teaspoon dried tarragon

1/4 teaspoon pepper

3 tablespoons fresh parsley, minced

Place potatoes in a large saucepan and cover with water; add salt. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Meanwhile, in another saucepan, combine the cream cheese and buttermilk; cook and stir over medium heat until cheese is melted and mixture is smooth. Remove from heat; add the onions, thyme, tarragon and pepper. Drain potatoes and place in a serving bowl; add cream mixture and toss to coat. Sprinkle with parsley.

Elegant Chicken

and Bean Special

3 cups chicken, canned, cooked and diced

2/3 cup celery, chopped

2 cups Chinese noodles

1 can water chestnuts, drained and sliced

1 medium onion, diced

3 cups green beans, drained

1 can cream of mushroom soup

1 can cheddar cheese soup

1 cup milk

1/8 teaspoon black pepper

1 cup Chinese noodles

1/2 cup slivered almonds

In a large bowl, combine the diced chicken, chopped celery, Chinese noodles, drained water chestnuts, chopped onion, and drained green beans. Gently mix together and pour in a 9x13-inch pan. In a medium saucepan, combine the soups, milk and pepper. Cook over medium heat until smooth. Pour over top of chicken mixture. Sprinkle second amount of noodles and slivered almonds over the top of the chicken mixture and bake uncovered in 350 degree oven for 45 minutes.

Karla's Marinade

1/2 cup soy sauce

1/4 cup ketchup

2 tablespoons brown sugar

chopped onion to your liking

1/3 cup cooking sherry

1/4 cup lemon juice

1 tablespoon garlic powder

1 1/2 teaspoons Accent seasoning mix

pepper to taste

Mixed all ingredients together. Marinate fish, meat or chicken for 12 hours in a glass container or a plastic bag. Drain meat and grill.
